Jess—Lisa's ingenious daughter-in-law—has crafted a delicious dessert that's quick, inexpensive, and tames even the most ravenous chocolate cravings. The salty crunch of Ritz crackers is the perfect companion for the rich taste of peanut butter and creamy milk chocolate. And only three ingredients? Hello, easy! You can whip up a batch of these tasty treats in less time than it takes to boil water. Kids will love these cookies, so when you serve up these goodies be prepared for compliments along the lines of "awesomest mom ever."

Jess's famous "Ritz cracker with peanut butter dipped-in-chocolate cookie"
Ingredients:
- Ritz crackers
- Peanut butter
- "CandiQuik" milk chocolate for melting (can purchase at Stater Brothers and Ralph's)
Directions:
- Sandwich about 1 teaspoon of Peanut Butter between two Ritz Crackers (don't put so much that it oozes out but be sure to cover cracker edge to edge).
- Melt chocolate in microwave (do in 15 second intervals) and watch carefully so it doesn't burn.
- Use small tongs to dip your sandwiches.
- Place on cookie sheet with wax paper or parchment paper.
- Cool (you can put in the refrigerator for 10 minutes to speed this process).
These are super delicious and you can store them for a long time.

Please note: You can also get dark chocolate for melting (combine both the milk chocolate and the dark chocolate for a fuller flavor). You can use all milk chocolate, all dark chocolate or mixed—whatever you prefer.
